Yikes, I'm on a book deadline. When this happens to a writer, it means aching shoulders, snarled hair, gallons of coffee, angst, chest pain, and little sleep. I will not need a zombie costume for Halloween. It's scary times at Rattlebridge.

Foodie Friday -- October 18, 2012


Welcome to the October 18th Foodie Friday,

For a fast, no-fuss dessert, a pound cake can be transformed with a touch of fruit
and a background of green-themed accessories.
Like my mother always says, a quick meal is about flavor plus inedible elements.


I live on a farm, and eggs are plentiful. A pound cake is a favorite way to use two dozen or more guinea eggs; however, when I'm feeling a time-crunch, usually due to a writing deadline, I have no shame buying a store-bought deli cake.

When time is short and tempers are frayed, I often find myself walking down the frozen food aisle, muttering to myself, "What's fast? What's different?"
So I run back to the deli and grab a roasted chicken.
Next, I hit the produce aisle.
Now I have the ingredients for chicken salad, fruit, low-carb sandwiches, and dessert--and the meal will be ready in twenty minutes.
(If the phone keeps ringing, add a few minutes.)
 

 
Finger sandwiches can be fashioned out of cookie cutters, low-carb bread, and itty leftovers from the salad. Add a dash of paprika and mayonnaise. 

 
Line a salad bowl with lemon slices, then add fruit.
You can make a lemony-Splenda sauce if you have time.
 
Shredding a deli-chicken takes minutes. You can even buy pre-chopped celery if you are in a mad dash. Add mayo, lemon juice, seasoning, your favorite veggies, and a handful of chopped, roasted nuts. 

A napkin says, Do I look rushed? No, not me.

 
Beautiful serving pieces can distract picky eaters. 

 
It takes less time to set the table if all of your dishes are white!
Everything matches.



 
For dessert, try simple cream puffs.
Buy pre-packaged shells, add whipped cream,
and sprinkle with ground espresso.

Foodie Friday

It's cookie season at Rattlebridge Farm.
I have limited skills with icing, but that doesn't stop me from opening the deep drawer where I keep my cookie cutters. A few years ago, I bought a set of "autumn" cutters. .

I bought the decorative items online and the local Publix Grocery.

 Of course, cookie baking often leads to decorating.
Even the statues are adorned with some type of frippery.
What else has been going on at Rattlebridge Farm?
I've been walking around the pasture, enjoying the colorful leaves and the nippy morning air. In the evening, I smell the faint tinge of woodsmoke, a sign that autumn has arrived in the mountains. 
The big event at Rattlebridge: my husband and I will celebrate our 34th wedding anniversary later this month.
