I make flatbread pizza twice a month. It's the perfect entree for exhausted or time-challenged cooks. Depending on the toppings, this pizza takes 2 minutes to assemble and 15 minutes to bake.
Each flatbread is adorably egg-shaped, the perfect pre-Easter pizza.
Quick Flatbread Pizza
Deli or grocery store flatbread (available at Publix (two to a package); Kroger has a similar product.
Pancetta, diced
green pepper, diced
small yellow onion, thinly sliced
cherry tomatoes
Pizza sauce
Cheese
fresh basil

Pre-heat oven to 400 degrees. Pour 1 T extra virgin olive oil into a frying pan. Gently cook the pancetta. The point is to remove as much grease as possible so your pizza won't get soggy. Place pancetta on paper towels and set aside. Place flatbread on an ungreased baking pan. Spread each flatbread with pizza sauce (3 or 4 teaspoons). Top with pancetta and sliced cherry tomatoes.
Salt and pepper to taste.

Tip: To retain the tomatoes' juice, slice them with a bread knife.
My older son is a chef, and he taught me this handy trick.

Sprinkle green peppers and onion over each flatbread. Top with shredded cheese.
Bake 15 minutes. Remove from oven. Garnish with basil.
Flatbread pizzas are perfect for families with picky eaters. The pizzas can be individualized--mushrooms, ham, bacon, chicken, or plain cheese.
You can even grill it.
If you like pizza and have zero time,
you can't go wrong with an entree that's on the table in under 17 minutes.
